Spinach and Mushrooms Recipe

Ingredients

  • 14 dried mushrooms, sliced

  • 280 ml warm water

  • 3 tablespoons oil

  • 4 tablespoons soy sauce

  • 1 tablespoon sherry

  • 1 tablespoon sugar

  • 1/2 teaspoon salt

  • 1 tablespoon corn flour

  • 1 tablespoon water

  • 450 grams spinach (or one large frozen packet)

Method

 

1. Soak the mushrooms in 280 ml warm water for 20 minutes, drain but keep the water.
2. Cut off mushroom stalks. Heat pan, add oil and fry the mushrooms until golden.
3. Add soy sauce, sherry, sugar and salt and cook for 2 minute.
4. Add mushroom water and simmer for 2 hours.
5. Add corn flour mixed with water, cook until sauce thickens.
6. Wash the spinach and shake off all moisture from the leaves.
7. Put in a saucepan over low heat, without adding any water. Heat the spinach through,

    turning the leaves over.
8. Keep on low heat long enough to warm all the spinach thoroughly, put on a serving dish,
9. Top with mushrooms and sauce and serve.
