Sardines Fried with Potato & Ladies Fingers Recipe |

Method
1. Heat oil and deep fry potatoes until light brown. 2. Set aside. Next fry the ladies fingers for about 2 minutes and set aside. 3. Pour out excess oil leaving about 3 tbsp to fry the garlic and ginger paste until brown. 4. Drop in the chillies, stir fry. Add sardines. 5. Sprinkle curry powder over and add salt to taste. 6. Gently stir to mix thoroughly. 7. Add fried ladies fingers and potatoes with about 1/2 cup water and simmer gently for 5 minutes. 8. Do not over cook sardines.
