Sardines Fried with Potato & Ladies Fingers Recipe

Ingredients

  • 1 large tin sardines with tomato sauce

  • 10 ladies fingers (wash, cut off tops and tips and halve)

  • 3 medium potatoes (cut into finger lengths and rub with a little salt)

  • 1 level tbsp meat curry powder

  • 2 green chillies (slit halfway)

  • 2 red chillies (slit halfway)

  • salt

  • oil for frying

  • 2 pods garlic

  • 1 cm ginger

  • 1/2 metric cup water

 

Method

 

1. Heat oil and deep fry potatoes until light brown.

2. Set aside. Next fry the ladies fingers for about 2 minutes and set aside.

3. Pour out excess oil leaving about 3 tbsp to fry the garlic and ginger paste until brown.

4. Drop in the chillies, stir fry. Add sardines.

5. Sprinkle curry powder over and add salt to taste.

6. Gently stir to mix thoroughly.

7. Add fried ladies fingers and potatoes with about 1/2 cup water and simmer gently for 5 minutes.

8. Do not over cook sardines.
