Mushrooms in Gravy Recipe

Ingredients

  • 7 grams garlic, crushed

  • 2 tablespoons oil

  • 113 grams thick dried mushrooms

  • 7 grams ginger, crushed

  • stock

  • 1 teaspoon pork dripping

  • 1 pinch sugar

  • 1 teaspoon soy sauce

  • salt

  • 1 teaspoon corn flour

  • 2 tablespoons cold water

  • few drops sesame oil

Method

 

1. Cook garlic in a hot oiled pan for 1 minute and remove.
2. Put in mushrooms and cook for 5-6 minutes.
3. Transfer mushrooms to saucepan, add ginger and double the amount of stock required to cover them.
4. Bring to boil, then simmer gently for 2 hours.
5. Take out and throw away the ginger.
6. Strain the mushrooms, keeping the stock, arrange mushrooms in a dish.
7. Bring mushroom stock to the boil, add dripping, sugar, soy sauce and salt to taste.
8. Cook for 1 minute, add corn flour diluted with water and sesame oil.
9. Cook for 1 minute, pour over the mushrooms and serve.
