Chinese Pickled Cucumber (2) Recipe

Ingredients

  • 1 good-sized cucumber

  • 3 tablespoons vinegar

  • 2 tablespoons sugar

  • 1 teaspoon green ginger, finely pounded

Method

 

1. Partly peel the cucumber, i.e. leaving on alternate strips of peel, and slice it very thinly.
2. Bring vinegar, sugar and ginger to the boil in a saucepan.
3. Pour over the cucumber, allow to cool and serve.
