Cauliflower, Water Chestnuts and Mushrooms Recipe

Ingredients

  • 5 dried Mushrooms

  • 1 medium-sized cauliflower

  • boiling water

  • 2 tablespoons oil

  • 6 water chestnuts

  • 280 ml mushroom water

  • 2 tablespoons stock

  • 1 tablespoon sherry

  • 2 teaspoon soy sauce

  • 2 teaspoon corn flour

  • a few drops of sesame oil

Method

 

1. Soak the mushrooms in warm water for 20-25 minutes, drain but keep the water.

2. Cut off mushroom stalks, then slice.

3. Divide the cauliflower into flowerets, put into a saucepan, pour on enough boiling water to cover

   completely.

4. Leave to stand in this water for 5 minutes. Drain well.

5. Heat pan, add oil and fry the mushrooms briskly.

6. Cut each chestnut into quarters and add to mushrooms.

7. Add mushrooms water, stock, sherry, soy sauce, corn flour and sesame oil.

8. Simmer for a few seconds, stirring constantly.

9. Add cauliflower, allow it to heat through and serve.
