Ingredients

450 grams spare pork ribs

4 bitter melons (or cucumbers and green
peppers)

1 dessertspoon soy sauce

1 dessertspoon brandy

boiling water

1 tablespoon black soy beans

1 tablespoon lard or oil

2 cloves garlic, crushed

salt
-
426 ml water

1/2 teaspoon corn flour
Method
1. Cut the pork into thin pieces, bones
and all, 1-inch by 1/2-inch.
2. Cut the melons in halves, remove seeds and cut into
1/2-inch
slices.
3. Sprinkle the pork with soy sauce and brandy.
4. Pour boiling water on the soy beans, drain and crush them with a
fork.
5. Heat oil with garlic, remove garlic when it browns.
6. Put in pork, season with salt to taste and quick fry.
7. As soon as the pork turns white, add soy beans and cook, stirring
constantly for 5 minutes.
8. Add water, simmer gently for 20 minutes, add melon, mix, cover and
simmer for 10 minutes.
9. Dilute corn flour with water, add to the pan, stir to thicken the
sauce and serve.
