Method
1. Cut the bean curd into oblong pieces, put them in a frying basket. 2. Dip into boiling water for 10 seconds. Drain. 3. Heat oil to boiling point, throw in the diced shrimps, cook for 10 seconds. 4. Add bean curd and spring onions. Cook together for 1 minute. 5. Add peas and mushrooms. Cook for 1 minute. 6. Add sherry, soy sauce, salt and pepper. Turn off heat. Stir gently and serve.
