Bamboo Shoots and Mushrooms Recipe

Ingredients

  • 12 diced mushrooms, soaked and cut into strips

  • 227 grams bamboo shoots, sliced

  • 8 tablespoons oil

  • 4 tablespoons soy sauce

  • 1 tablespoon sherry

  • 1 tablespoon sugar

  • 2 tablespoons mushroom water

  • 1 tablespoon corn flour

Method


1. Soak mushrooms, for 20 minutes in warm water to cover.
2. Toss bamboo shoots in 6 tablespoons oil for a few seconds. Drain.
3. Fry mushrooms in 2 tablespoons oil.
4. Add soy sauce, sherry and sugar. Blend.
5. Add bamboo shoots and mushroom water mixed with corn flour.
6. Simmer gently for 2-3 minutes, stirring slowly, and serve.
