Aubergines, Cantonese Style Recipe

cooking time: 15 minutes

 

Ingredients

  • 450 grams aubergines

  • boiling water

  • 227 grams chicken (or veal) uncooked

  • 1 tablespoon corn flour

  • 2 tablespoons soy sauce

  • 1 tablespoon brandy

  • 4 tablespoons oil

  • 4 pimentos, seeded and diced

  • 1 clove garlic, finely chopped

  • 1 tablespoon fresh ginger, finely pounded

  • 140 ml chicken stock

Method

 

1. Cut the aubergines into shoe string strips, cover with boiling water, allow to stand for 5 minutes and drain.
2. Cut the chicken meat (breast preferably) into similar thin, long strips.
3. Mix corn flour, soy sauce and brandy and coat the chicken with this mixture.
4. Heat oil in pan. Fry pimentos until they change colour.
5. Remove and in the same pan fry the chicken, 3-4 minutes.
6. Add aubergines, garlic, pimentos, ginger and stock.

7. Cook for one minute and serve.
