Sweet Corn Soup with Chicken Recipe

Ingredients

  • 227 grams breast of chicken (keep 1-2 slices, finely shredded for garnish)

  • 1 small knob ginger

  • 1 can sweet corn

  • 1/2 teaspoon Ve-Tsin

  • 1 teaspoon brandy (or dry sherry)

  • corn flour (for dredging)

  • 1 egg, well-beaten

  • salt

  • little ham, finely shredded

  • 1 teaspoon corn flour (for thickening)

  • 2 tablespoons cold water
     

Method

 

1 Slice half the chicken finely and bring to the boil in the water together with the bones and ginger.
2 Simmer for 30 minutes, then add sweet corn, Ve-Tsin and brandy.
3 Simmer for 5 minutes, add rest of chicken finely shredded and dredged with dry corn flour.
4 Add egg, stir, season to taste.
5 Garnish with ham and chicken, and thicken with corn flour and water.
