Ingredients

1 large sole (or plaice), filleted

3 pieces Chinese sweet cucumber

4 spring onions

1.4 litter water

1 dessertspoon soy sauce

1 dessertspoon peanut oil

1 white of egg, beaten

salt and pepper
Method
1. Slice fish into small uniform pieces.
2. Dice the cucumber and chop spring onions.
3. Bring water to boil.
4. Mix fish with soy sauce, oil and sweet cucumber.
5. Pour this mixture into the boiling water. Allow to come to the boil
again, remove from heat and whisk
in white of egg.
6. Season to taste, sprinkle with spring onions and serve.
