Ingredients

113 grams black soy beans

1.7 litter water

2 pieces dried tangerine peel

2 trotters, singed and cleaned

1 dessertspoon light

2 slices green ginger

1 teaspoon salt
Method
1. Soak beans in water for 4-5 hours.
2. Bring them to the boil in water with tangerine peel, simmer for 45
minutes.
3. Add trotters, soy sauce, ginger and salt, simmer 3 hours until
trotters are cooked.
4. Drain the trotters, slice into small pieces and serve with soup.

This preparation can also be served as an aspic.
