Mushroom Soup Recipe

cooking time: 1 hour

 

Ingredients

  • 110 grams dried mushrooms ( 230 grams fresh mushrooms)

  • 500 gram meat (pork, giblets, chicken or beef)

  • 1/4 teaspoon Ve-Tsin

  • 1.7 litter water

  • salt

  • green ginger (optional)

  • egg, beaten (optional)

Method

 

1. Blanch the dried mushrooms and soak in hot water until soft. (Fresh mushrooms do not need any

    preliminary treatment.)
2. Cut meat into slices and bring to the boil with the mushrooms.
3. Add Ve-Tsin and simmer for 1 hour. Salt to taste and serve.


Note:
If fresh mushrooms are used, green ginger is boiled with the meat and the mushrooms are added 20 minutes before serving. Egg can be added to the soup just before serving.
