Mixed Vegetable Soup Recipe

cooking time: 20 minutes

 

Ingredients

  • 230 grams fresh mushrooms

  • 2 tablespoons sesame oil (or olive oil)

  • 230 grams spinach

  • 110 grams spring greens

  • small bunch watercress

  • 2 pints boiling water

  • salt and pepper

Method

 

1. Prepare mushroom oil by cutting the mushrooms into fine slices and frying

    in hot oil on a very low heat for 5 minutes.
2. Wash and clean the vegetables, cut into pieces and sauté in half the mushroom oil,

    keeping the rest for future use.
3. Cook gently for 5 minutes, then add water and simmer for 10 minutes.
4. Season with salt and pepper and serve.
