Ingredients

1 can sweet corn (cream style)

1 teaspoon corn flour

2 tablespoons cold water

2 teaspoons salt

1/2
teaspoon pepper

1.7 litter hot chicken stock

340 grams uncooked breast of chicken,
minced

2 egg whites, beaten

2 tablespoons roasted almonds, chopped
Method
1. Mince the corn, to break up the
kernels.
2. Blend corn flour with water, add to corn, season with salt and
pepper and stir into the stock.
3. Pound the chicken until smooth and add egg whites.
4. Add to corn soup.
5. Bring to the boil again, then simmer very gently for 8-10 minutes.
Sprinkle with almonds and serve.
Variation
Minced chicken and corn chowder with
ham
As above, using 2 tablespoons of cooked ham, finely shredded, instead
of almonds.
