Long and Short Soup Recipe

Long and short soup contains a combination of noodles and meat patties.


cooking time: 15 minutes

 

Ingredients

  • 113 grams raw pork (or raw shrimps, minced)

  • salt

  • pastry for patties (refer to recipe Pastry for Noodles and Patties (Wun Tun)

  • water

  • noodles (refer to recipe Fresh Noodles)

  • 1.42 litter chicken stock (or pork stock)

  • 226 grams roast pork, or boiled chicken or roast duck, shredded

  • 1 tablespoon spring onions, finely chopped

Method

 

1. Salt the pork generously and using a coffee spoon, put a small quantity of it on

   one corner of a small square of pastry prepared as described on recipe (Pastry for Noodles and Patties   

   (Wun Tun)
2. Fold diagonally about half way, using the meat as a seal.
3. Bring the right end of the pastry right across, and after making a half turn seal with a dab

   of meat on the first fold.
4. Do likewise with the left end. (It is important that the three ends of the pastry should be

    left free and loose).
5. Drop these patties into a pan of boiling water and boil for 5 minutes.
6. Do likewise with the noodles prepared as described on recipe (Fresh Noodles) and boil for 8 minutes,

   making sure the noodles do not stick together.
7. Drain, place in a serving bowl, add boiling stock, roast pork or chicken or duck.
8. Sprinkle with spring onions and serve.
