Ingredients

3 lamb's kidneys

1 heaped teaspoon corn flour

3 tablespoons water

57 grams fresh mushrooms

1 dessertspoon lard (or oil)

850ml stock (or hot water)

1/2 large cucumber, sliced

1 dessertspoon light soy sauce
Method
1. Trim kidneys, remove all gristle, cut into thin slices.
2. Mix with corn flour and water.
3. Slice mushrooms and fry quickly with kidneys in lard or oil, for 2
minutes.
4. Add stock, bring to boil, and add cucumber.
5. Simmer for l minute, add soy sauce, and serve.
