1. Bone duck and boil the bones in water for hours. Slice duck meat
finely.
2. Shred bamboo shoots, mushrooms and water chestnuts and mix together.
3. Dilute corn flour with 140 ml water, add sherry and pour over
duck.
4. Remove bones from soup, then add water chestnuts, bamboo shoots,
mushrooms, lotus seed
and duck meat.
5. Cook for 3 minutes, add sesame oil and soy sauce.
6. Season with salt and pepper and serve.
