Fresh Lotus Seed and Duck Soup Recipe

Ingredients

  • 1 duck (about 910 grams.)

  • 3 litter water

  • 57 grams bamboo shoots

  • 57 grams fresh mushrooms

  • 30 grams water chestnuts

  • 1 teaspoon corn flour

  • 1 dessertspoon sherry

  • 1 can fresh lotus seeds

  • 1 teaspoon sesame oil

  • 1 teaspoon soy sauce

  • salt and pepper

Method

 

1. Bone duck and boil the bones in water for hours. Slice duck meat finely.
2. Shred bamboo shoots, mushrooms and water chestnuts and mix together.
3. Dilute corn flour with 140 ml water, add sherry and pour over duck.
4. Remove bones from soup, then add water chestnuts, bamboo shoots, mushrooms, lotus seed

    and duck meat.
5. Cook for 3 minutes, add sesame oil and soy sauce.
6. Season with salt and pepper and serve.
