Duck and Parsnip Soup Recipe

cooking time: 4 hours


Ingredients

  • 4 medium-sized parsnips

  • 1 young duckling (1 1/2 kg)

  • 1.10 water

  • salt

Method

 

1. Cut parsnips in half lengthwise.
2. Place duck in a large bowl and cover with the parsnips.
3. Add water, cover with a well-fitting lid, put in a steamer and steam for 4 hours.
4. Season before serving.


Note:
The soup should be very clear and of a subtle flavour.
