Crab Soup Recipe

cooking time: 20 minutes

 

Ingredients

  • 1 large crab

  • 0.9 litter water

  • 30 grams lard (butter or chopped olive oil)

  • 4 tablespoons sherry powdered ginger

  • 2 cloves garlic, crushed

  • 113 grams spring onions, chopped

  • 2 tomatoes

  • 1 dessertspoon corn flour

  • 1 egg

Method

 

1. Remove flesh from shell and claws of crab.
2. Put in water, add lard, sherry, pinch of ginger, garlic, spring onions and tomatoes.
3. Thicken with corn flour and simmer for 20 minutes.
4. Beat egg in a soup tureen, bring soup to the boil and pour it over the egg, whisking all the time.            

   Serve at once.
