Courgette and Shrimps Soup Recipe

Ingredients

  • 30 grams dried shrimps

  • 1.2 litter water

  • 113 grams lean pork

  • 1 teaspoon salt

  • 2 baby marrows (courgettes)

  • 1 dessertspoon soy sauce

Method

 

1. Soak the shrimps in water, then make up to 1.14 litter water and bring to boil.
2. Cut pork into thin strips, add to the saucepan, season with salt and simmer for 10 minutes.
3. Peel marrows, cut into small chunks, add to saucepan and cook uncovered for 1
1/2-2 minutes.

   (Do not allow to simmer any longer as this will cause the courgettes to deteriorate in texture.)
4. Add soy sauce and serve immediately.
