Method
1. Heat the stock.
2. Beat eggs with sugar, salt, pepper and onions.
3. Fry this mixture in oil as an omelette, turning it to cook both
sides. Allow to cool, cut into small dice.
4. Put rice into boiling stock to heat through, stir, add seasoning if
necessary.
5. Pour into bowls, garnish with egg dice and serve.
Variation
Chicken soup with egg dice
As above, omitting the rice.
At the last moment, just before adding egg dice, stir in a little soy
