Bird's Nest in Whole Chicken Soup Recipe

Ingredients

  • 57 grams birds' nest

  • water

  • 1 chicken leg

  • 1 young chicken (1-2 kg.)

  • 3 teaspoons gin

  • 1.14 litter chicken stock

Method

 

1. Soak the birds' nest in hot water for 4 hours.
2. Put it in a saucepan, cover with water and boil for 5 minutes.
3. Transfer into ovenproof dish, place on top chicken leg and steam for 2
1/2 hours.
4. Clean the chicken, open at the neck and take out inside and all bones, taking care not to break the skin.
5. Pour gin inside chicken and shake well.
6. Stuff chicken with birds' nest, moisten with enough stock to fill chicken. Sew up neck opening.
7. Place chicken in basin, pour in enough stock to cover and steam for 1 hour. Remove `stitches'

    before serving
