Asparagus Soup Recipe

cooking time: 45 minutes

 

Ingredients

  • 227 grams breast of chicken

  • 1.14 litter water

  • 1 can asparagus tips (or 1 small bundle fresh asparagus)

  • 1/4 teaspoon Ve-Tsin

  • 1 teaspoon brandy (or dry sherry)

  • 1 teaspoon corn flour(cornstarch)

  • 2 tablespoons cold water salt

  • knob green ginger (optional)

Method

 

1. Slice the chicken and boil in water with the asparagus and its liquid.
2. Simmer for 30 minutes.
3. Add Ve-Tsin and brandy.
4. Thicken with corn flour and water.
5. Salt to taste and serve.


Note:
When fresh asparagus is used it should be cut into slices 1-inch long and boiled uncovered with the ginger and the chicken for 45 minutes.
