Rice, the staple food of the Chinese,
occupies roughly the same place in the Chinese scheme of things as
bread does, say, in France. It is indispensable, but the richer one is
the less one needs of it. The appearance of cooked rice is considered
to be of great importance. If cooked correctly, and this is mainly a
question of observing the right proportions of rice to water, the
grains should be firm and separate. Rice should be washed thoroughly
before cooking. Our cook in China used to say `in nine waters', and the

off should be completely clear.
