Ingredients

57 grams dried Chinese mushrooms

113 grams Chinese noodles

peanut oil for deep frying

1 onion, chopped

3 spring onions, chopped

450 grams cooked chicken, shredded

2 tablespoons soy sauce

Method
1. Soak the mushrooms in enough warm
water to cover for 20 minutes.
2. Drain and remove stalks. Slice the mushrooms.
3. Boil noodles in plenty of salted water for 5 minutes, drain and
rinse with cold water. Drain well.
4. Heat oil and deep fry noodles until crisp and 78golden. This should
take about 3-4 minutes.
Remove, arrange on a serving dish and keep warm.
5. Pour off most of the fat, leaving 1-2 tablespoons in the pan and fry
the onions for 1 minute.
6. Add chicken, fry for 1 minute. Season with salt and soy sauce.
7. Add mushrooms, fry together for 5 minutes, stirring all the time.
8. Spoon the chicken and mushroom garnish on top of the noodles and
serve.
