Ingredients

227 grams lean pork (or chicken)

227 grams peas (or beans) shelled

113 grams shrimps( or crab meat), peeled

113 grams mushrooms, sliced

57 grams bamboo shoots, diced

1 tablespoon spring onions, chopped

2-3 eggs

1 dessertspoon soy sauce

680 grams cold rice, cooked
Method
1. See that all ingredients are cut to a uniform size, determining the
size and shape by the
smallest natural ingredient;
thus, if peas are used, the rest of the ingredients must be cut into
dice no
bigger than a pea.
2. Beat eggs with soy sauce and keep by.
3. Cook all other ingredients in a deep oiled pan, season to taste, add
rice, stirring until it becomes
separate and quite
hot.
4. Stir to mix well. Pour the eggs over the whole mixture.
5. Increase heat to cook quickly and keep stirring until the eggs have
been integrated into the
mixture and are quite
dry.
