Greek Pilaf Recipe

cooking time: 35 minute

 

Ingredients

  • 3 tbsp peanut oil

  • 1 med. onion (chopped)

  • 1 clove garlic, crushed

  • 250 g. sliced mushrooms

  • 1 c. uncooked rice

  • 2 c. chicken broth

  • 1 tsp salt

  • 1/4 tsp. black pepper

  • 3 tbsp raisins

  • 1/2 c. toasted slivered almonds

Method

 

1. Saute onion in peanut oil. Add garlic and mushrooms and saute briefly.

2. Add rice and mix well, browning over high heat about 3-5 minute.

3. Add broiling broth, salt and pepper.

4. Cover tightly and simmer over low heat for 20 minutes.

5. Stir in raisins and nuts and continue cooking 10 minutes. or until raisins are heated through.

 

Note:

Cooked peas, diced pimento, diced tomatoes or sliced, cooked sausage may be added.
