Fried Rice with Pork and Shredded Omelette Recipe

Ingredients

  • 2 cups cooked rice

  • 340 grams lean pork

  • 3-4 tablespoons peanut oil

  • 4 spring onions, chopped

  • 1 clove garlic, chopped

  • 113 grams bean sprouts

  • 2 eggs

  • pinch salt

  • 1 teaspoon lukewarm water

  • 1 tablespoon soy sauce

Method

 

1. Leave the rice to cool.
2. Cut pork into very thin slices and fry it in oil until it turns pale.
3. Move to the side of the pan, and fry spring onions and garlic for 2 minutes.
4. Add bean sprouts and simmer together for 2 minutes.
5. Beat eggs with salt and water and in a separate pan fry an omelette.
6. Cut it into thin strips.
7. Add rice to the pork, fry long enough only to heat through the rice (2 minutes), season with soy sauce,  

   stir well.
8. Transfer fried rice to a heated serving dish, garnish with shredded omelette and serve.
