Fried Rice with Ham and Beans Recipe

Ingredients

  • 2 eggs, beaten

  • salt and pepper

  • 2 tablespoons oil

  • 113 grams ham, shredded

  • 1 small onion, chopped

  • 113 grams beans, sliced

  • 1 tablespoon soy sauce

  • 450 grams cooked cold rice

  • 3-4 spring onions, chopped

Method

 

1. Season eggs with salt and pepper to taste and cook as an ordinary omelette in a lightly greased pan.
2. Remove and keep hot.
3. Quick fry the ham with onions and beans for about 20 seconds, stirring all the time.
4. Season with soy sauce and simmer for 3 minutes.
5. Add rice, breaking it down with chopsticks to loosen the grains and to heat it through.
6. Slice the omelette, scatter over the rice, sprinkle with spring onions and serve.
