Fresh noodles Recipe

Ingredients

  • 450 grams flour

  • 1/2 teaspoon salt

  • 2 eggs

Method

 

1. Using 340 grams flour, salt and eggs, make a dough.
2. Knead well and roll out thinly. (To ensure evenness of rolling out, always roll forward.)
3. Use the rest of the flour for sprinkling the pastry board to prevent sticking.
4. Fold the dough and cut into strips — fine ones for soup, wider ones for braising, frying, etc.
5. Sprinkle a little flour over the strips and loosen them out on a board into long strips.

   (If not using immediately, cover with a damp cloth.)
6. Allow 1.7 litter of water to boil 450 grams of noodles, and always put the noodles into boiling water,

   separating them with a pair of chopsticks to prevent sticking.
