Deep Fried Chinese Patties Recipe

cooking time: 30 minutes


Ingredients

  • 450 grams meat, (beef or pork), minced

  • 113 grams onions, chopped

  • 113 grams cabbage, chopped

  • 1 tablespoon soy sauce

  • 1 teaspoon sherry

  • 340 grams flour

  • 1 egg

  • pinch salt

  • 280 ml water

  • oil for deep frying

Method

 

1. Mix the meat, onions and cabbage. Fry in a little oil for 10 minutes.
2. Season with soy sauce and sherry and leave to get cold.
3. Prepare dough using flour, egg, salt and water, adding the latter a little at a time.
4. Mix the dough quickly, roll out wafer thin, (always rolling forward), and with a pastry cutter cut

    out little circles about 3-inches in diameter.
5. Fill with meat.
6. Close the ends ' tightly, sealing edges with a little cold water.
7. Fry in deep oil until crisp and golden, and serve with soy sauce.

 


Variations
Semi-fried patties
As above, but instead of deep frying the patties, fry them in 30 grams oil, browning them on each side. Cover with 570 grams stock, simmer for 3 minutes, and serve.


Boiled patties
Prepare as above, and drop the patties into a large pan of boiling water. As soon as they float up to the surface, add a few drops of cold water. Drain and serve with soy sauce.
