Char Shiu Pow (Roast Pork Steamed Buns) Recipe

Ingredients

  • 1 tablespoon peanut oil

  • 113 grams raw pork, finely chopped

  • 1 tablespoon onion, finely chopped

  • 2 tablespoons mushrooms, finely chopped

  • pinch salt

  • 1/2 teaspoon soy sauce

  • 1 teaspoon corn flour

  • 1 teaspoon oyster sauce

  • 2 tablespoons cold water

  • 227 grams plain flour

  • 1/2 teaspoon baking powder

  • 1 teaspoon sugar

  • 280 hot water

  • vinegar

  • soy sauce
     

Method

 

1. Heat oil and fry pork quickly, to seal the juices (about 1 minute).
2. Add onion and mushrooms, cook together, stirring constantly, for 1 minute. Season with salt and

   soy sauce.   

3. Mix corn flour with oyster sauce and cold water, blend this mixture into the contents frying pan, cook

   for a further minute and remove from heat.

4. Mix flour with baking powder and sugar. Add enough water to make a stiff dough. Knead on a flour

   board until very firm.

5. Divide dough into 8-10 pieces, shape each into a ball, roll out into 2 1/2  - 3 inch circles.

6. Put a portion of the filling into the middle of each circle. Pinch the edges together.

7. Arrange the "buns" on a piece of moist cloth on the bottom of a steamer, or place each on a piece of

   greaseproof paper cut to match, and steam for 10- 12 minutes.

8. Serve with vinegar or soy sauce.

 

Variation

 

Instead of mushroom, add to the pork spinach (or cabbage), parboiled, drained and finely chopped.
