Ingredients
Method
1. Boil the noodles for 6 minutes.
2. Rinse under cold water tap and drain.
3. Melt half the lard and fry the noodles for 3 minutes, add soy sauce
and stock.
4. Cut all the meat into thin slices.
5. Heat remainder of lard. Fry vegetables in it for 5 minutes.
6. Add meat, fry together for 3 minutes, and serve on top of the
braised noodles, sprinkled with vinegar.
Variations
Braised noodles with bamboo shoots and mushrooms
As above, substituting 227 grams veal, 170 grams bamboo shoots, sliced,
and 4 oz. mushrooms for the lean pork, celery, and onions.
Braised noodles with shrimps
As above, substituting 570 ml shrimps and 227 grams broccoli for pork
and vegetables.
Braised noodles with lobster and cauliflower
As above, substituting 227 grams lobster meat, diced, and 227 grams
cauliflower divided into flowerets, for shrimps and broccoli.
