Sweet and Sour Sauce Ribs Recipe

Ingredients

  • 500 spare ribs, cut in 1-inch lengths

  • 710 ml water

  • 4 tablespoons soy sauce

  • 1 teaspoon salt

  • 3 1/2 tablespoons sugar

  • 1 tablespoon Chinese wine (or sherry)

  • 2 sweet peppers, shredded

  • 2 tablespoons Chinese sweet pickles

  • 3 tablespoons vinegar

  • 2 tablespoons corn flour

 

Method

 

1. Cut the ribs as described in recipe for Spare ribs. Put in a pan with 570 ml water soy sauce and salt.

    Bring to the boil then simmer for 45 minutes.

2. Pour ribs and their gravy into a large frying pan, add half a tablespoon sugar and wine.

3. Stir over a high flame to coat all pieces with gravy and evaporate the liquid, for 6-7 minutes.

4. Add peppers and pickles, cool for 2 minutes, stirring all the time.

5. Mixing remaining sugar with vinegar and corn flour, dilute with 140 ml cold water, blend the mixture

   into the pan. Continue to cook, stirring all the time for 2-3 minutes and serve.
