450 grams chicken, boned diced

1 teaspoon sugar

1 dessertspoon soy sauce

3 tablespoons plain flour

570 ml water

140 ml vinegar

227 grams pineapple, diced

2 tablespoons water

Method
1. Sprinkle chicken with 1 teaspoon salt,
sugar and soy sauce, mix well and coat with plain flour.
2. Dip chicken pieces into egg and deep fry in smoking hot oil until
golden. (This should not take more than
2
1/2-3
minutes.)
3. Strain and keep hot.
4. Heat peanut oil in a saucepan, add water, vinegar and the remaining
salt and sugar.
5. Bring to the boil, add pineapple, and corn flour mixed with water,
remove from heat.
6. Add chicken, mix well and serve at once.
