Stewed Chicken with Chestnuts Recipe

Ingredients

  • 1 chicken (450 grams)

  • 2 tablespoons gin

  • small piece ginger, minced or finely chopped

  • 1 clove garlic

  • 1 tablespoon oil

  • salt

  • 1 teaspoon sugar

  • 30 grams mushrooms (dried)

  • 30 grams Chinese preserved fruits (Hung Jo)

  • chicken (or veal stock)

  • 227 grams chestnuts, shelled and skinned

  • 1 dessertspoon soy sauce

  • few drops sesame oil
     

Method

 

1. Cut chicken into neat slices about 1 1/2 inches by 1/2 inch.
2. Combine gin and ginger and squeeze through muslin bag to extract all juice.
3. Cook garlic in hot oiled pan for
1/2 minute and remove.
4. Sprinkle pan with little salt, add chicken and cook for 5 minutes.
5. Add sugar and simmer for 2 minutes, stirring constantly.
6. Add gin and ginger juice, mushrooms (whole if small, halved if big) and Chinese preserved fruits.
7. Add enough stock to cover and simmer gently for 45 minutes, or longer if chicken is tough.
8. Add chestnuts and cook together for 10 minutes.
9. Sprinkle in soy sauce, sesame oil and serve.
