1. Dice the chicken, almonds, onions,
bamboo shoots and mushrooms.
2. Heat pan with enough oil to grease it.
3. Put in bamboo shoots, onions and mushrooms.
4. Season with salt to taste and cook briskly for 1 minute.
5. Add sugar, a little pepper and enough stock to cover. Cook for 1
minute.
6. Add chicken, corn flour diluted with water, sesame oil and sherry.
7. Fry for 1 minute. Add almonds, fry for 1 minute and serve
