Steamed Duck with Mushrooms Recipe

cooking time: 55 minutes

 

Ingredients

  • 1 duck (450 grams)

  • oil for frying

  • salt

  • pepper

  • 1 tablespoon sherry

  • 1 dessertspoon soy sauce

  • 1 teaspoon sugar

  • 1 clove garlic, crushed

  • 57 grams fresh mushrooms

  • veal (or chicken stock)

  • corn flour

  • 2 tablespoons cold water

  • few drops sesame oil

 

Method

 

1. Cut duck in half, remove backbone, then cut duck in pieces about 1 1/2 inches by 1/2 inch.

2. Put duck in hot oiled pan with salt and pepper to taste, sherry, soy sauce and sugar.

3. Cook briskly for 3 minutes, stirring frequently.

4. Remove duck and leave on a plate.

5. Add little more oil to pan and heat.

6. Add garlic and cook for 1/2 minute then remove garlic.

7. Cook mushrooms in same pan for 5 minutes, add the duck and enough stock to cover.

8. Simmer for 45 minutes, thicken with corn flour diluted with water.

9. Sprinkle in sesame oil. Cook for a further minute and serve.
