Spiced Leg of Lamb Recipe

cooking time: 3 1/2 hours

 

Ingredients

  • 1.8 kg leg of lamb

  • salt

  • water

  • 1 tablespoon soy sauce

  • 1 tablespoon brandy

  • 3 tablespoon oil

  • 1 knob green ginger

  • 2 cloves garlic

  • 10 pieces Chinese aniseed

  • 850 ml stock corn flour (optional)

 

Method

 

1. Rub lamb with salt and boil in saucepan with enough water to cover, for 15 minutes.
2. Remove lamb from stock and put in a deep dish.
3. Allow to cool, then sprinkle with salt and rub with mixture of soy sauce and brandy.
4. Heat oil with ginger and garlic in pan big enough to take the leg of lamb.
5. Fry lamb in this mixture.
6. When it is nicely browned on all sides, add 850 ml stock and any of the juice left

    in the dish and pour over the meat.
7. Add aniseed, bring to the boil and simmer gently for 3 hours.


Note:
If desired, the sauce can be thickened with corn flour.
