Ingredients

8 chicken wings, trimmed and washed

570 ml boiling water

juice
1/2
lemon

2 tablespoons soy sauce

2 tablespoons oyster sauce

1.14 litter chicken stock

4 teaspoons salt

2 teaspoons sugar

1 tablespoon powdered cinnamon

1/2
tablespoon powdered ginger

1/4
teaspoon pepper
Method
1. Put the chicken wings into a saucepan,
add enough water to cover and the lemon juice. (The squeezed
lemon may also be
added.)
2. Bring to the boil, reduce heat, simmer for 5 minutes and drain.
3. Put in another pan, cover with mixed soy sauce, oyster sauce, stock,
1/2
teaspoon salt and sugar.
4. Bring to the boil, then simmer gently for 20 minutes. Drain and
leave to cool.
5. Mix the rest of the salt with cinnamon, ginger and pepper in a small
pan.
6. Heat this mixture, coat the wings with it and serve.
