Spare Ribs Recipe

Ingredients

  • 450 grams pork spare ribs, chopped into 1-inch lengths

  • 426 ml water

  • 1 teaspoon salt

  • 3 tablespoons soy sauce

  • 1 teaspoon sugar

  • 2 tablespoons Chinese wine (or sherry)

Method

 

1. Rinse and dry the ribs, cut into separate pieces, so that each little bone has some flesh.
2. Put into a pan, add water, salt and soy sauce.
3. Bring to the boil, then simmer gently for 45 minutes.
4. Transfer pork with all its gravy into a frying pan, sprinkle with sugar and wine and stir over a high flame to

    evaporate the liquid.


Note:
The idea is to coat all pieces of rib with the dressing and to keep stirring until they look dry.


Variation
Spare ribs with pineapple
Proceed as above, but allow 2 tablespoons of sugar and instead of wine add 113 grams shredded pineapple to the frying pan.
