Simmered Beef Brisket with Red Wine and Chestnuts Recipe

 

Ingredients

  • 600 gram lean beef brisket

  • 150 gram shelled chestnuts

  • 2 carrots

  • 1/2 onion

  • 3 tomatoes

  • 4 springs thyme

  • 1 cup red wine

  • 1 tsp salt

 

Method

 

1. Rinse beef brisket. Scald and cut into pieces. Scald and skin chestnuts.

2. Peel carrots. Rinse and cut into pieces. Chop onion and tomatoes.

3. Heat 2 tbsps of oil in wok. Stir fry onion until fragrant. Add beef brisket and stir fry well. Put in tomatoes

   and carrots. Mix well. Pour in red wine and 3 cups of boiling water. Bring to the boil. Reduce to low heat

   and simmer for 1 hour. Add chestnuts and thyme. Simmer for 1/2 hour. Season with salt and serve.
