Roast Pork with Plum Sauce Recipe

 

Ingredients

  • 2 kg shoulder pork

  • 1 metric cup plum sauce

  • salt

  • pepper

  • 3 tbsp garlic juice

  • dash of Chinese 5 spice powder

  • 1/2 metric cup honey

  • 4 tbsp sherry

  • oil for shallow frying

  • 5 tbsp sherry

  • 6 tbsp fish sauce gravy

  • water

 

Method

 

1. Season pork with seasoning sauces and honey.

2. Pour sherry over and leave to marinate for 2-3 hours.

3. Heat oil in a saucepan.

4. Fry the pork to brown it all over and to crisp the skin.

5. Pour out excess oil and cover shoulder pork with enough water and the marinade.

6. Cook over very moderate heat till tender.

7. Allow pork to absorb all the liquid.

8. Cool then cut in serving portions.

9. Serve with a good chilli or barbecue sauce.
