Roast Pork with Apple Crescents Recipe

 

cooking time: 30 minutes

 

Ingredients

  • 450 grams lean pork

  • 2 tablespoons sugar

  • 1 dessertspoon light soy sauce

  • 1 tablespoon red soy sauce bean paste

  • pinch salt

  • pinch Ve-Tsin

  • few drops cochineal colouring

  • 1 tablespoon sesame oil

  • 1 tablespoon honey

  • 2-3 apples

  • lemon juice

 

Method

 

1. Cut the pork with the grain into long strips.

2. Put sugar, soy sauce, bean paste( bean curd), salt, Ve-Tsin and cochineal into a bowl.

3. Mix well, put in pork strips and leave to steep in the flavouring for 1 hour.

4. Skewer the meat and either grill on a high flame or suspend from the shelf bars in the hottest possible

   oven (500 F- Gas 9) and roast for 15 minutes. ( Whatever method you choose, catch all the juices in a

   drip pan, to be used as gravy)

5. Mix sesame oil with honey, brush the meat with the mixture and continue to cook for 10 minutes.

6. Meanwhile, peel and core the apples, cut into round slices, then cut each slice in half and trim into a

   " crescent".

7. Brush with lemon juice to prevent discoloration.

8. Slice the meat thinly across the grain, arrange on a heated ovenproof serving dish over lapping with

    apple half moons, pour the gravy from the drip pan over the dish.

9. Return to the oven for 5 minutes and service.
