Method
1. Trim tongues. Place in large saucepan with carrots, onion, bay leaves, pepper corns, salt and pepper. 2. Add water, bring to boil, cover and turn down heat. 3. Simmer for 3-4 hours until tender. 4. Remove meat, and let cool for 25-30 minutes, skin and slice. 5. Blend tomatoes, tomato puree, lemon juice, sugar and paprika powder together. 6. Add sultanas. Layer sliced tongue into ovenproof casserole, spreading tomato mixture between each layer of meat and over top. 7. Bake at 175 degrees C for 10-15 minutes. Serve with herbed rice and green salad.
