Pot Roast Sweet Sour Beef Tongue with Sultanas Recipe

 

Ingredients

  • 2kg fresh beef tongue

  • 2 onions, chopped

  • 4 peppercorns

  • freshly ground black pepper

  • one 425 g can peeled tomatoes

  • 125 ml lemon juice

  • 1 teaspoon rose paprika

  • 2 carrots sliced

  • 2 bay leaves

  • 1 teaspoon cooking salt

  • 500 ml water

  • 2 tablespoons tomato puree

  • 2 tablespoons sugar

  • 3 tablespoons sultanas

 

Method

 

1. Trim tongues. Place in large saucepan with carrots, onion, bay leaves, pepper corns, salt and pepper.

2. Add water, bring to boil, cover and turn down heat.

3. Simmer for 3-4 hours until tender.

4. Remove meat, and let cool for 25-30 minutes, skin and slice.

5. Blend tomatoes, tomato puree, lemon juice, sugar and paprika powder together.

6. Add sultanas. Layer sliced tongue into ovenproof casserole, spreading tomato mixture between each

   layer of meat and over top.

7. Bake at 175 degrees C for 10-15 minutes. Serve with herbed rice and green salad.
