Pot Roast Herbed Cushion of Pork Recipe

 

Ingredients

  • 1.5 kg cushion of pork (boned, thick rib)

  • 4 tablespoons cooking oil

  • freshly ground black pepper

  • 2 bay leaves

  • 1/2 teaspoon freshly ground coriander

  • 1 teaspoon dry mustard

  • 250 ml beer

  • 4 onions, sliced

  • coarse cooking salt

  • 2 cloves garlic, crushed

  • 2 teaspoons marjoram

  • 4 tablespoons fresh breadcrumbs

 

Method

 

1. Heat oil in flameproof casserole.

2. Remove outside pork skin, tie into neat parcel, and brown meat until golden.

3. Remove meat, add remaining ingredients except beer to casserole and replace pork.

4. Heat beer and pour round meat.

5. Cover and bake at 170 degrees C for 2 hours, until tender.

6. Serve meat sliced with sauté potatoes and fresh peas and onions tossed in a little cream.
