142 grams peanuts, shelled

680 grams pork

142 grams fresh mushrooms

57 grams celery

1 dessertspoon soy sauce

1 dessertspoon brandy

1 teaspoon corn flour

1 clove garlic, crushed

1 dessertspoon oyster sauce

140 ml water

spring onions, finely chopped
Method
1. Blanch peanuts, sprinkle with salt and
fry briskly in very little oil, taking care not to burn them.
2. As soon as they turn golden, remove and drain on greaseproof paper.
3. Cut pork into small dice.
4. Chop mushrooms and celery.
5. Combine pork, soy, brandy, corn flour and salt. Mix well.
6. Heat oil in a pan with garlic, add pork and cook briskly, stirring
all the time.
7. Add oyster sauce, mushrooms and celery. Simmer for 5 minutes,
stirring all the time.
8. Add peanuts and stir well.
9. Add water to dilute the gravy, bring to the boil, sprinkle with
spring onions and serve.
