Pork Chops with Dried Olives Recipe

Ingredients

  • 30 grams dried olives (Lahm Gok)

  • 30 grams salted beans (Dow See)

  • 340 grams chops

  • 1 tablespoon oil

  • 1 clove garlic, crushed

  • 1 teaspoon salt

  • 1 dessertspoon soy sauce

  • 1 teaspoon sugar

  • veal (or chicken stock)

  • 1 teaspoon corn flour

  • 2 tablespoons cold water

  • few drops sesame oil

 

Method

 

1. Soak olives in water for 5 minutes, drain, add to beans and chop together finely.
2. Cut chops, bones and all, into 1-inch pieces.
3. Heat oil in pan, add garlic and bean and olive mixture and cook for 1 minute.
4. Add pork, salt, soy sauce and sugar.
5. Cook briskly for 1 minute, stirring constantly.
6. Add enough stock to cover and simmer gently for 15 minutes.
7. Thicken with corn flour diluted with water.
8. Sprinkle with sesame oil. Cook for 1 minute and serve.
