Ingredients

2 cleaned pig's trotters

57 grams green ginger

1 tablespoon black soy beans

1.14 litter water

3 tablespoons vinegar

1 tablespoons sugar

Chinese pickled cucumbers, sliced (or
sweet pickled onions, chopped)
Method
1. Chop trotters into uniform pieces
about 1-inch square.
2. Brown them with the ginger in a pan without any fat.
3. Scald and crush black soy beans, add to trotters, stir, simmer for 5
minutes.
4. Add water and leave to simmer for 2
1/2hours.
5. Add vinegar and sugar, simmer for 10 minutes and serve either on a
foundation of pickled cucumbers or
garnished with sweet pickled
onions.
